Vegetarian-Friendly Recipes for the Ultimate Summer Fiesta
Cinco de Mayo is heralded as the one day of the year to consume all of the tacos with all of the margaritas. But wait, don’t tacos & tequila go together like Bonnie & Clyde every day of the year? You don’t need a holiday–and you don’t even need to leave your home–to have a taco & tequila party. We asked Executive Sous Chef Steph to share her go-to recipe for an at-home taco party, and had Bartender Dan mix up the perfect Passion Fruit Marg to go alongside it!
Chef Steph doesn’t avoid meat all together, but she tries to eat vegetarian as much as possible. Her Veggie Tacos are perfect for vegetarian guests, but pack a flavorful protein crunch from blackened fried chickpeas that’ll win over the hearts of any meat eaters as well. Build these tacos to serve, or put out bowls of all of the ingredients so your amigos can DIY!
Veggie Tacos
Grilled Corn Tortilla
Roasted Cauliflower
Cucumbers (sliced thin)
Fried Blackened Chickpeas
Pickled Red Onion w/ Mint
Calabrian Tzatziki
Cilantro
Instructions: Layer the grilled tortilla with roasted cauliflower, cukes, red onion & chickpeas. Drizzle with tzatziki. Garnish with cilantro. Skewer to hold together, and serve with extra tzatziki because trust us.
Rosted Cauliflower: Combine ingredients and roast at 350F for 10min
1 head cauliflower (cut into florets)
1/4 cup oilive oil
1tsp salt
1tsp pepper
Pickled Red Onion: Combine ingredients below and let sit for at least an hour in the fridge until serving
1 juliened red onion
juice of one lime
1/4 cup chiffonade mint
1/2 tsp salt
1/2 tsp pepper
Fried Chickpeas: Combine ingredients below and fry in a saute pan until crispy
1 cup chickpeas
1/2 cup blackening spiece
1tsp salt
Calabrian Tzatziki: Combine ingredients and store in the fridge until serving. The longer this sits, the more the flavors marry–prep up to a day in advance!
1 cup greek yogurt
1/4 cucumber, grated
2tsp chopped parsley
zest of one lemon
2tsp lemon juice
1tsp calabrian peppers
1tsp salt
1tsp pepper
How about a refreshing marg to wash it all down? Bartender Dan mixed up a sweet heat tequila cocktail that pairs perfectly with Steph’s veggie tacos. Serving a crowd? Multiply the ingredients by the number of guests you’re expecting, then again by 1-3 depending on how many drinks you want to make per person. Store the batched margarita in the fridge, then put out a bowl of the rim salt & garnishes for guests to serve themselves.
Passion Fruit Margarita
1.5oz Blanco Tequila
.5oz Passion Fruit Syrup
.5oz Agave
1.0oz Lime Juice
Directions: Line rim of serving glass in lime juice (either using your hands and squeezing 1/4 of a lime around the top, or dipping rim into plate / bowl of juice). Dip in mixture of 1/2 salt + 1/2 Tajin. Mix all ingredients together, shake and strain over ice into glass. Garnish with lime twist & jalapeno slice.
